Beetroot juice is known for its ability to improve sporting performance by improving
the oxygen supply to the muscles. This function is made possible by the
nitrates present in abundance in the vegetable. British researchers from the
University of Exeter have discovered that these same nitrates are associated
with better blood vessels and brain function in the elderly. They presented
their findings in the journal Redox Biology. The results
showed higher levels of bacteria associated with good vascular and cognitive
health when the elderly drank the nitrate-rich beetroot juice. The researchers
also found lower levels of bacteria linked to disease and inflammation. Their
systolic blood pressure also fell after drinking beetroot juice.
Beetroot, and other foods such as lettuce, spinach and
celery, are rich in inorganic nitrate. This substance can be secreted in saliva
and converted into nitric oxide by oral bacteria. Older people tend to have
lower nitric oxide production, which is associated with poorer vascular and
cognitive health.
Recipe 1: 2 beetroot, 1 carrot, juice of one orange,
juice of half a lemon.Mix everything together in a blender and drink as much as
you like every day.
