Low in calories and rich in water, cucumbers provide vitamins C and K. This vegetable contains potassium, which is associated with low blood pressure. For the body to function properly, it is essential to maintain a good balance of potassium, both inside and outside the cells. Potassium dominates (150mg/100g). Because of its high potassium content and low sodium content, it helps to eliminate toxins and excess water from the body.  This is why cucumbers are recommended for chronically ill patients, including hypertensives and diabetics. As potassium is an electrolyte, it is a positively charged ion that must remain sufficiently concentrated (around 30 times more concentrated inside the cells than outside) to be able to play its role. This means, among other things, interacting with sodium to control nerve transmissions, muscle contractions and heart function. Cucumbers are also rich in Citrulline, an amino acid that is very useful in the fight against muscle wasting. To reap the full benefits of cucumber, we recommend eating it fresh in salads, as an aperitif or in juice.

Recipe Cucumber juice with mint : 2 organic cucumbers preferred, 2 limes, 25 fresh mint leaves, cold water and ice cubes, sugar choice and quantity according to taste (as part of a diet or a snack). Keep the cucumber skin if it is organic. Peel the limes (to avoid bitterness). Using an extractor or blender, strain the vegetables and extract the juice. Add the same amount of cold water as the juice obtained. Sweeten with honey. Serve chilled with ice cubes.
