Potatoes contain 74.68% water and 22% carbohydrates. Depending on the quality of the soil in which they are grown, they also contain the minerals sodium, iron, copper, sulphur, calcium, magnesium, phosphorus, zinc and potassium, as well as group B vitamins, except B12, C and E.

The proteins it contains are rich in lysine, an essential amino acid lacking in cereals, and 1.6% plant fiber, which is soluble.  This tuber is a very useful food for a variety of disorders and illnesses.

Stomach ailments

The potato is the stomach's best friend because of the gastric well-being felt after eating it. This beneficial effect is attributed to at least three factors: firstly, its antacid effect. It is a relatively alkaline food capable of neutralizing excess acid. This alkalizing action occurs locally in the stomach, as well as in the blood and urine. For best results, medicine recommends raw potato juice as a popular remedy, as it is very rich in alkaline substances. A few spoonfuls before a meal are enough to calm stomach acidity. Then its physical consistency. The soft texture of the potato reduces the need for digestive work on the part of the stomach and provides it with a certain amount of rest. Finally, its sedative content. Research carried out by the Hoffman-La Roche laboratories in Basel (Switzerland) and the University of Gottingen (Germany) has shown that potatoes contain small quantities of several benzodiazepines, sedative substances widely used in pharmacy. One of the substances found in potatoes is diazepam, the same active ingredient found in the well-known drug “Valium”. These natural potato sedatives may also act locally on the stomach, helping to relax this organ.

For all these reasons, potatoes, especially mashed potatoes, are highly recommended in cases of gastric hyperacidity, gastritis, stomach ulcers, gastric ptosis (drooping stomach), and in general in all cases of difficult digestion or a delicate stomach.

Recommendations

Potatoes should be peeled before use, as the toxic substances in the skin can penetrate to the inside during cooking. Care should be taken when cooking potatoes (fried in too much oil, spicy), or when accompanying foods (fried products, meats, etc.), to ensure that they do not cancel out the apple's healing effects on the stomach. One of the recommended oils is soybean oil. However, it is important that the oil does not overheat, i.e. that it does not produce smoke.
